Dried Seafood

I’m using seafood in a very broad sense here, to include both the dried seaweed and the fish and shrimp.

In this photo, clockwise from top:
- roasted laver, used as it is with rice or toasted with sesame oil as a snack
- dried kelp, used in soup for flavoring (can seem a bit slimy, usually removed before serving)
- dried shrimp, used as a flavoring or soaked and cooked as a snack
- dried anchovies, used to flavor broth (I remove the heads and put them in a net ball to keep them out of the final broth).
